Black Garlic

First things first, let’s dispel any misconceptions. Despite its name, black garlic is not a different variety of garlic altogether. Instead, it’s created through a process called the maillard reaction, this process not only alters the flavor of the garlic but also changes its color, texture, and nutritional composition.

The Process

  1. Selection of Garlic – The process begins with the careful selection of fresh hardneck garlic bulbs. Quality is paramount here, as it directly influences the outcome of the black garlic.
  2. Temperature and Humidity – The selected garlic bulbs are then placed into the oven, where they are brought to a temperature of about 150°F and a humidity of 80% – 90%. 
  3. Time – The garlic is then left in the oven for a time period of four weeks. During this time the garlic undergoes a process called the Maillard Reaction. According to the National Library of Medicine, the Maillard reaction is defined as ‘a chemical reaction between amino acids and reducing sugars that generates different flavours and brown colour’. During this time the garlic is monitored to ensure the reaction occurs at the desired rate and that the conditions remain constant. 
  4. Transformation – By the end of the four weeks the garlic is removed from the oven as a new product! The potent taste and smell of raw garlic is transformed into the savory, sweet, and umami flavour of black garlic. The colour changes from the distinctive white of fresh garlic into the rich brown and black colour that characterizes black garlic.

  1. I have tried to make black garlic without success. It was done in a rice cooker on warm but might not of been a tight enough seal. Other than a stove what else could you use ?dehydrator
